Sample menus

The culinary food world is our oyster mushroom, but here are a few dishes in my repertoire:

Entrees

Lemon piccatta cauliflower steaks
Vegetable Paella
Vegetable strudel with curried cauliflower, potatoes and peas
Vegetarian pad thai with eggs or tofu
Spaghetti with marinara and eggplant “meatballs”

Soups

Carrot ginger bisque
Dilled mushroom barley
Spicy gazpacho
Endive rice with thyme
Chilled potato chive and garlic

Sides

Sesame carrots
Baked Zucchini, parsnip and potato pancakes
Stuffed sweet potatoes with smoked gouda and broccoli
Stuffed tomatoes with cous cous and herbs
Three bean salad with cilantro, lime and corn
